The newest jewel in the crown of Africa’s business hub, Hotel Sky Sandton offers 453 rooms as well as 13 world-class conference venues, restaurants, bars and other facilities. Hotel Sky Cape Town boasts 540 rooms in their iconic 29-storey building in the heart of the Cape Town CBD (Opening 2021).
We have proudly supplied and installed ultra-modern Fagor equipment to service their restaurants.
Situated on the 5th floor, Eclipse can seat 240 and consists of an open terrace and a bar area.
Eclipse also has been equipped with Fagor 700 serial modular cooking equipment comprising of Flattop grills, Bain Marie, Deep fat fryers, chip dump, 4 and 2 burner gas ranges with oven, chargrills as well as under unit Fagor Fridges to allow for storage and easy access for the Chefs working in this area. from of house as well as a Fagor 10 pan combi oven.
Equinox, situated on the 1st floor, can seat 300 as it has an open terrace area.
Equinox have an open front of house cooking area which has been equipment will Fagor 700 series modular units comprising of Flattop grills, Bain Marie, Deep fat fryers, chip dump, 4 and 2 burner gas ranges with oven, chargrills as well as under unit Fagor Fridges to allow for storage and easy access for the Chefs working in this area as well as 2 Fagor 10 pan combi ovens and a Ratisol Rotisserie to allow open cooking for the dinner guest. The back of house kitchen is fitted with Fagor 900 series tilting pan, boiling pot, Fagor CCO120 rack dishwasher system as well as a Fagor 20 pan Combo oven.
The installations on the Sandton site had a few unusual issues like unloading onto a dirt patch and manually having to move equipment from the truck to loading bay.
The equipment for the 5th floor was hoisted up to the Terrace area on the 5th floor as there were no lifts on site, and then carried to its final position in the kitchen.
The installation in Sky CPT was also prone to difficulties due to the kitchen being on the 25th and 26th floor of the hotel. Again the lifts on site were too small, so the equipment was hoisted to the top of the building and lowered through a hole cut in the roof to the 27th floor and then carried down one flight of stairs by hand.
